Basic Rules of Service in a Restaurant

  • Basic Rules of Service

Restaurant has basic rules of service. If any staff in the restaurant during their duty time, break this basic rules of service manager should advice him. Or take any other action.
Following rules and standards are to be followed and maintained during the service ensuring guest comfort:

  •   Food is served from the right side of the guest.
  • Beverages are served from the right of the guest. 
  • Empty plates are to be placed from the right.
  • Clearing is to be done also from the right side.
  •  When clearing appetizer, soup, main course or dessert clear as well the unused cutlers. 
  • Large plates are to be cleared first followed by small plates so you may stack them for easier handling and control (decoy system).
  • Spare cover should be removed immediately after the guests are seated.
  • Hot food should be served on a hot plate and cold food should be on cold plate.
  •  Beverages are to be placed on the right hand side – just above the table knife.
  •  Ladies should be serving first.
  • Children are priority to be served first before ladies.
  • Elderly persons are served before younger persons.
  •  Guest must be served first before the host.
  •   Coffee should go with cream and tea with milk and coffee or tea spoon.
  •   Wine should tested by the host.
  •  When host approves, serve guests, ladies first in clockwise direction.
  •   White wine, rose wine, sparkling wine and champagne should be served chilled.
  • Red wine is served at room temperature.
  •  Beer should be served in chilled condition without ice-cubes.
 So every staff should follow these basic rules of service, if they want to give better service to their guest. Besides manager should training them properly.
